What is the difference between jelly, jam, and preserves?
Jelly: Made from strained fruit juice. It is clear, firm, and holds its shape.
Jam: Made from crushed or chopped fruit, resulting in a thicker, less firm spread.
Preserves: Contains small, whole fruits or large pieces of fruit in a soft jelly or syrup.
Spreadable Fruits: Similar to preserves but sweetened only with fruit juice or fruit concentrate.
How should I store jelly?
Unopened: Store in a cool, dry, dark place. Properly canned jelly can last for 6-12 months.
Also Opened: Refrigerate after opening. It is generally recommended to use opened commercial jelly within 1-6 months and homemade jelly within 1 month for best quality.
Do I need to refrigerate it?
Yes, while high sugar content helps preserve it, opened jars should be refrigerated to prevent mold growth and maintain quality.
Why did my jelly turn out too runny?
This is usually caused by an imbalance of pectin, acid, or sugar. It often happens if you use too much fruit juice, too little sugar, or if you make too large a batch at once. 
What do I do if there is mold on my jelly?
Discard the entire jar. Mold can produce mycotoxins, so scraping off the top is not recommended.
Is jelly healthy?
Jelly is mostly fruit juice and sugar, making it high in sugar. It should be enjoyed in moderation as part of a balanced diet.
What is pectin?
Pectin is a natural fiber found in fruit that allows the jelly to set. Fruits like apples and grapes have high natural pectin, while strawberries and cherries have low levels and usually require added commercial pectin.
